Opening of the Wine Seasons

This evening we will spend with the ambassador of Burgundy.ru, Laura Baybulatova, who will present a splendid selection of Magnum-sized wines from the company’s collection. For each wine, the restaurant’s chef, Alexander Ibragimov, has chosen the perfect gastronomic pairing.

The main protagonists of the dinner will be seven Burgundy and Champagne wines in magnum formats, which have earned positions in international rankings (or received evaluations from world critics). As it is known, a magnum – a bottle with a volume of 1.5 liters – is the ideal size for the long-term aging of serious wines: in it, they continue to mature, unfolding to their fullest potential.

A welcome glass of Le Brun De Neuville Cote Blanche Blanc De Blancs brut will be an excellent start to the dinner, during which guests can expect numerous enogastronomic discoveries.

The dinner will be opened by the vibrant extra brut from Andre Jacquart House — Andre Jacquart Premier Cru Vertus Experience Blanc De Blancs, with the first course featuring a trio of Casablanca Tunisian oysters, Magadan sea urchin, and Amaebi shrimp. The second pairing with this exceptional Champagne will be a seafood platter including sibas ceviche, toasts on Borodinsky bread with pike and red caviar, and crab pâté served on creamy brioche with fruit chutney.

And then we will transition from Champagne to Burgundy to savor a glass of crisp Chardonnay from Laurent Ponsot – Bourgogne Cuvée Du Perce-Neige, paired with an appetizer of Kamchatka crab with vegetables and citrus dressing.

In this oenological journey through one of the greatest regions of France, there will be plenty more discoveries. For instance, Ballot-Millot Meursault 1er Cru Genevrières, where grapes are harvested from old vines aged 80-85 years. Paired with it, the chef will prepare the delicate Far Eastern scallop with Jerusalem artichoke puree.

And to accompany the refined glass of Domaine De La Vougeraie Vougeot 1er Cru Le Clos Blanc De Vougeot, Alexander Ibragimov will present the “Thermidor” langoustine, prepared using the classic recipe with bisque, butter, and Parmesan.

The finale of the dinner will be a tasting of the rare Champagne Charles Heidsieck Réserve Brut from a “Jeroboam” (a bottle with a volume of 3 liters), with 40% of it consisting of reserve wines aged for 10 years or more.
